Premium Dealcoholized Wine Starts Before Dealcoholization

Discover why high-quality dealcoholized wine production starts before dealcoholization and how winemaking decisions can influence the final result.

Download the Winemaking Guideline

The conversation around dealcoholized wine production often focuses on one central question: how can alcohol be removed while preserving the quality and identity of the wine? While dealcoholization technology plays an essential role, producing a high-quality final product requires wineries to look beyond the process itself and consider how the wine has been developed from the very beginning.

As expectations for No/Low wines continue to rise, the challenge is no longer simply to reduce alcohol content. Consumers increasingly expect wines that retain the aromatic expression, balance, structure and overall character associated with their conventional counterparts. Meeting those expectations requires a different approach to winemaking, one in which the final dealcoholized product is considered well before the alcohol is removed.

High-quality dealcoholized wine begins with the base wine

Alcohol contributes significantly to the sensory balance of wine, influencing aroma perception, acidity, sweetness, structure and mouthfeel. When alcohol is removed, the relationship between these elements changes, making the characteristics of the base wine particularly important.

For winemakers, this means considering from an early stage how decisions such as grape variety, harvest timing, fermentation strategy and base wine composition may influence the final result. Rather than selecting an existing wine and then deciding to dealcoholize it, wineries have an opportunity to develop wines specifically with dealcoholization in mind.

This change in perspective is fundamental to producing higher-quality wines. The question is no longer simply which wine should be dealcoholized, but what kind of wine should be created for dealcoholization?

A more integrated approach to dealcoholized wine production

Producing a premium dealcoholized wine requires the different stages of winemaking to be considered as part of one connected process. White and red wines present different challenges, aroma compounds respond differently during processing, and the desired final alcohol level can influence both production decisions and the sensory balance of the finished wine.

Technology is a critical part of this process, but its purpose should be to preserve the quality and character developed during winemaking. Combining the right wine design with the right dealcoholization and aroma recovery technology provides a stronger foundation for retaining varietal expression and producing a final wine that remains true to its original identity.

Turning knowledge into practical winemaking decisions

This integrated approach is the foundation of the new Solos Winemaking Guidelines for High-Quality Dealcoholized Wine Production, developed to support wineries and winemakers navigating the technical challenges of this growing category.

The guideline brings together practical recommendations covering the key stages of the process, including base wine development, fermentation, aroma preservation, dealcoholization, final sensory balance and regulatory considerations for both white and red wines.

For wineries looking to develop premium dealcoholized wines, the message is clear: quality is not something that can be added after dealcoholization. It needs to be considered throughout the entire winemaking process.

When Consumers Choose Quality: Zeronimo Named USA TODAY's Best Non-Alcoholic Wine

Awards are more than trophies. They reflect changing consumer expectations and signal where an industry is headed.

This week, those expectations were made clear when Zeronimo was named Best Non-Alcoholic Wine in the USA TODAY 10Best Readers' Choice Awards 2026. Following a nomination by a panel of wine and beverage experts, readers across the United States voted Zeronimo to the top of a highly competitive field, ahead of some of the most established names in the premium alcohol-free wine category.

For the Zeronimo team, this recognition is a testament to their unwavering commitment to quality. Founded by Austrian winemakers Katja Bernegger and Patrick Bayer, the brand has challenged the perception that alcohol-free wine requires compromise. Instead, Zeronimo begins with exceptional wines, including Leonis Blend, crafted from a wine awarded 98 points, and Century Blend, produced from a wine aged for 22 years, demonstrating that outstanding alcohol-free wines start with outstanding wines. Combined with meticulous craftsmanship and a relentless focus on excellence, this philosophy has enabled Zeronimo to create alcohol-free wines that stand alongside the very best.

"This award is a wonderful recognition of our team's dedication to crafting exceptional alcohol-free wines," said Katja Bernegger, Co-Founder of Zeronimo. "From the very beginning, our goal has been to show that removing alcohol should never mean compromising on quality. We are grateful to everyone who voted for us and proud to share this milestone with partners like Solos, who have supported our vision from the start."

At Solos, we are proud to be part of that journey. Through our collaboration with Zeronimo and our advanced dealcoholization technology, we have had the privilege of supporting the creation of premium alcohol-free wines that preserve the character, aroma and complexity of the original wine. Partnerships like this are at the heart of our mission to help wineries produce exceptional dealcoholized wines without compromising quality.

This award is not only a remarkable achievement for Zeronimo. It is another clear sign that the alcohol-free wine category has entered a new era. Consumers are no longer looking simply for an alternative to wine. They are looking for exceptional wines, regardless of alcohol content.

"Seeing Zeronimo receive this recognition is incredibly rewarding," said Claudia Geyer, Founder & CTO of Solos. "Our collaboration has always been driven by a shared commitment to quality and innovation. Awards like this show what is possible when exceptional winemaking and advanced dealcoholization technology come together."

As demand for premium alcohol-free wines continues to grow, achievements like this highlight what is possible through collaboration, innovation and an uncompromising commitment to quality. We congratulate Katja, Patrick and the entire Zeronimo team on this well-deserved achievement and look forward to continuing our collaboration as the premium alcohol-free wine category reaches new heights.

Beyond Dealcoholisation: What Award-Winning Producers Are Teaching the No & Low Wine Industry

Industry leaders discuss how innovation, advanced dealcoholisation technology and premium winemaking are shaping the future of alcohol-free wine.

Valencia, Spain, July 28, 2026 - The conversation around No & Low wine has changed.

For years, the focus was on consumer moderation trends and the technical challenge of removing alcohol. Today, the discussion has moved beyond whether alcohol-free wine is possible to a more important question: how can producers create premium alcohol-free wines that deliver the quality, authenticity and enjoyment consumers expect from traditional wine?

That question was at the heart of a recent webinar hosted by the International Wine & Spirit Competition (IWSC) in partnership with Solos Technology, a leader in advanced wine dealcoholisation technology. Moderated by IWSC judge Iren Erem, the discussion brought together Christian Nett (Weingut Bergdolt-Reif & Nett), Katja Bernegger (Zeronimo), Rachel Martin (Oceano Wines) and Claudia Geyer, Co-founder and CTO of Solos Technology. Together, they explored how the category is evolving, from winemaking and dealcoholisation technology to consumer expectations, education and future market opportunities.

Although each speaker approached the topic from a different perspective, they shared a common ambition: raising the standard of premium alcohol-free wine.

The Future of Premium Alcohol-Free Wine

The webinar explores one of the biggest developments shaping the wine industry today: how exceptional winemaking and advanced dealcoholisation technology work together to create premium No & Low wines.

The panel discusses why quality begins in the vineyard, but also why preserving aroma, varietal character and wine identity depends on using technology designed specifically for premium wine. Rather than replacing craftsmanship, modern wine dealcoholisation technology is helping producers protect the qualities that make each wine unique while opening new opportunities for innovation and consumer choice.

The discussion also examines how changing consumer expectations are driving higher standards across the category and why more wineries are exploring alcohol-free wine as part of their long-term portfolio strategy.

Innovation Driving the No & Low Wine Category

Beyond production, the webinar looks at the broader evolution of the No & Low wine category.

Topics include consumer education, international recognition through competitions such as the IWSC, collaboration between producers and technology providers, and the growing role of premium alcohol-free wine within the global wine industry.

Whether you're a producer exploring wine dealcoholisation, a winemaker interested in premium alcohol-free wine production, or a wine professional following developments in the No & Low sector, the discussion offers valuable perspectives on where the category is heading and the innovations shaping its future.

Why Alcohol-Removed Sparkling Wine Is Emerging as a Strategic Growth Opportunity for Wine Brands

Based on insights from the Rack & Riddle and Solos white paper, "Alcohol-Removed Wine: Why Sparkling Is the Winning Format."

The no- and low-alcohol category continues to gain momentum as consumers seek greater flexibility in how and when they consume alcohol. While wine remains deeply embedded in social culture, consumer behaviour is evolving. Increasingly, people are choosing products that allow them to participate in social occasions while aligning with wellness goals, moderation habits, and changing lifestyles.

Against this backdrop, Rack & Riddle and Solos recently released a joint white paper exploring why alcohol-removed sparkling wine is emerging as one of the most promising segments within the category. The findings point to a broader opportunity for wine brands looking to expand their portfolios and connect with consumers across a wider range of occasions.

Consumers Are Expanding Their Choices

One of the biggest shifts in the beverage industry is that consumers are not necessarily drinking less. Instead, they are making different choices depending on the occasion.

A consumer may enjoy a traditional sparkling wine during a celebration, choose an alcohol-removed alternative during the week, and alternate between the two throughout the year. This behaviour is particularly common among younger consumers, who increasingly view moderation as part of a balanced lifestyle rather than an all-or-nothing decision.

For wine brands, this creates an opportunity to engage consumers in moments where alcohol may not be the preferred choice. Rather than replacing existing products, alcohol-removed wines can complement a portfolio and help brands remain relevant across more consumption occasions.

Why Sparkling Wine Stands Out

Not every wine style responds equally well to alcohol removal. Sparkling wine offers several characteristics that make it particularly well positioned within the category.

Its natural acidity helps maintain freshness and structure, while carbonation contributes texture, aromatic lift, and overall drinkability. These qualities help preserve the sensory experience consumers expect from sparkling wine, even after alcohol has been removed.

Sparkling wine also benefits from a strong connection to celebration, social gatherings, and shared experiences. As more consumers seek alcohol-free alternatives for these occasions, alcohol-removed sparkling wines allow them to participate fully in the ritual without sacrificing the experience.

For brands considering entry into the category, these advantages make sparkling wine a compelling starting point.

Technology Is Raising the Quality Standard

For many years, quality represented one of the biggest challenges facing alcohol-removed wine. Early products often struggled to maintain aroma, balance, and mouthfeel, leading many consumers to perceive the category as a compromise.

Today, advances in dealcoholization and aroma recovery technology are changing that perception.

One of the key innovations driving this evolution is Solos' patented Aroma Recovery System (ARS). Designed to capture, preserve, and restore the wine's original aroma compounds throughout the dealcoholization process, ARS helps producers maintain the character and sensory profile of the original wine.

When combined with Rack & Riddle's expertise in sparkling winemaking, these technological advances are helping redefine what consumers can expect from alcohol-removed sparkling wine. As quality continues to improve, brands have a greater opportunity to enter the category with confidence and deliver products that meet consumer expectations.

What This Means for Wine Brands

The rise of alcohol-removed sparkling wine is not about replacing traditional wine. It is about expanding the ways consumers can engage with a brand.

For wine producers, alcohol-removed offerings can help reach moderation-minded consumers, strengthen brand loyalty, and create incremental growth opportunities without disrupting core products. They can also provide a way to engage younger consumers whose purchasing habits are shaping the future of the category.

As consumer expectations continue to evolve, brands that offer both traditional and alcohol-removed options may be better positioned to remain relevant across a broader range of occasions and preferences.

Looking Ahead

Alcohol-removed wine is becoming an increasingly important part of the beverage landscape. Driven by changing consumer behaviour, improving technology, and growing demand for choice, the category is creating new opportunities for wine brands willing to innovate.

For producers evaluating future growth opportunities, alcohol-removed sparkling wine offers a combination of strong consumer appeal, technical feasibility, and occasion relevance that is difficult to ignore.

Solos Unlocks Premium NoLo in the U.S. As First Wines Made with Breakthrough Aroma Technology Enter Market

Fully live in California, Solos—now scaling to six international markets—is closing the NoLo quality gap, accelerating the category among strong global demand

Hopland, California, May 6, 2026 Solos, a subsidiary of global ingredient solutions provider Prodalim and a leading innovator creating true-to-source no- and low-alcohol (NoLo) beverages, today announced that its U.S. production facility is fully operational, with the first products made using Solos’ patented Aroma Recovery System (ARS) entering the market. The milestone marks a significant step forward for the premium NoLo category, bringing a new level of quality, precision, and scalability to producers in the world’s largest wine market, and represents a major expansion of Solos’ breakthrough technology across its growing global network, with Latin America next.

No- and low-alcohol is now an established category across the U.S. beverage landscape,[i] with dedicated placement on menus and retail shelves reflecting mainstream status and sustained consumer demand.[ii] As the NoLo wine space evolves, premiumization is accelerating, with demand for offerings that retain sensory integrity continuing to outpace supply. Solos’ sought-after technology enables U.S. wine brands to participate in the category’s rapid growth, expanding market access and capturing under‑served demand at the premium price tier.

“NoLo has reached an inflection point, and the next phase will be defined by quality,” said Niv Benyehuda, CEO of Solos. “In wine, the challenge has never been removing alcohol, it has been preserving what matters: aromatic integrity and wine character. This is what Solos solves at scale.”

Early commercial traction is already evident. Oceano Wines, which focuses on terroir-driven wines from California’s coastal vineyards, will release its first alcohol-removed wines made with Solos’ ARS technology this May, under the Oceano Zero label. The wines include single-vineyard Chardonnay and Pinot Noir from Spanish Springs Vineyard (SRP $45 and $55), with the brand noting much of the production is already pre-sold ahead of launch.

“Solos is the bridge between fine wine craftsmanship and NoLo expression, delivering a truly wine-like experience in non-alcoholic wine,” said Rachel Martin, Oceano Wines founder and CEO, who began working with the company after finding non-alcoholic wines made with Solos’ ARS retain greater fidelity to varietal character, structure, and sense of place. “Solos solves one of the biggest quality gaps in non-alcoholic wine: the loss of aromatic detail during alcohol removal. For single-vineyard producers, it’s the unlock we’ve been waiting for.”

At scale, that momentum is also evident in sparkling. Rack & Riddle, the #1 custom sparkling wine producer in the U.S.[iii] and Solos’ exclusive partner for sparkling wine production, has already sold nearly half of an initial run of alcohol-removed sparkling wine crafted using Solos’ ARS. Rack & Riddle’s production expertise and finishing infrastructure, combined with Solos’ technology, are a turnkey solution for brands seeking to enter the attractive sparkling wine NoLo subcategory.

“We’re seeing real demand from our winery clients for premium NoLo sparkling wines that can stand alongside traditional offerings,” said Mark Garaventa, CCO, Rack & Riddle. “With Solos’ technology, we’re able to deliver products that meet those expectations and move quickly to market. Sparkling is uniquely suited for alcohol removal, and we are excited to bring this expanded capability to our existing and new customers.”

With Northern California now live, alongside facilities serving customers in Germany, Switzerland, Spain, and France, Solos is becoming a key accelerant of NoLo globally, creating a flywheel for bringing premium NoLo wines and other beverages to market worldwide. Global demand for NoLo wine is expected to reach a projected USD $3.7 billion by 2030, with premium wines accounting for an estimated $1.5 billion of the category.[iv] Solos is scaling the infrastructure to meet the NoLo opportunity, expanding next into Latin America with service centers in Mexico and Chile.

Solos Advances Premium NoLo Wine at Commercial Scale

Southern European opening expands Solos’ global footprint to six markets, with U.S. capacity coming online next.

Alcàsser, Valencia, Spain, January 21, 2026 — Solos, a subsidiary of global beverage ingredient solutions provider Prodalim, today announced the opening of its purpose-built no- and low-alcohol (NoLo) production facility in Valencia, Spain. Officially inaugurated on January 15 and now fully operational, the site expands Solos’ global co-manufacturing platform to six markets and positions the company to lead the next phase of premium NoLo wine production.

According to recent analysis from IWSR1, NoLo wine is one of the fastest-growing segments in beverage alcohol. Solos’ 2,400-square-meter Valencia facility, with annual capacity of up to 16 million liters and serving markets across Spain and southern France, signals a step-change in NoLo wine quality. It brings Solos’ breakthrough Aroma Recovery System into Southern Europe, pairing advanced manufacturing capacity with a technical solution designed to unlock premium NoLo wine.

Enabling True-to-Source Premium NoLo Wines

Developed over more than a decade of deep R&D, Solos’ Aroma Recovery System (ARS) addresses the central technical barrier that has long constrained NoLo wine quality: aroma loss. Solos’ patented approach uses solid-phase extraction to capture a comprehensive spectrum of volatile aroma compounds directly from a wine’s liquid distillate. These compounds are reintroduced after dealcoholization, carrying the wine’s original aroma fingerprint through to its final NoLo expression.

By preserving aroma without the need for reformulation or additive correction, Solos creates NoLo wines that remain true to source and retain the ability to be labeled as “wine” under EU standards. At the Valencia facility, Solos integrates proprietary aroma recovery with gentle vacuum dealcoholization via a Centec DeAlcoTec column, also offering pilot trials, product development and finishing, and on-site bottling, delivering a fully integrated pathway from validation to market.

“The opening of our Valencia facility marks a meaningful milestone for Solos and for premium no- and low-alcohol wine,” said Pedro García, General Manager of Solos. “With advanced technology and a strong on-the-ground team now in place, this facility positions us to deliver both quality and capacity as international demand for premium NoLo continues to grow. We’re excited about what lies ahead as we expand partnerships and support the next phase of the category.”

Global Scale, Built for What’s Next

With the Valencia facility now live, Solos operates across six global markets, with service centers supporting wine producers in Germany, Switzerland, Austria, France, and Spain, and U.S. operations progressing toward launch. The Valencia site represents a critical step in Solos’ global scale-up, extending its manufacturing platform and reinforcing its ability to serve the world’s most relevant wine markets through localized infrastructure and technical depth.

“This opening makes Solos’ long-term vision tangible,” said Claudia Geyer, Chief Technology Officer of Solos. “It is the result of years of focused R&D and close collaboration across teams, and a reminder of the persistence that has shaped Solos from day one. Valencia marks the starting line for our next chapter of meaningful, uncompromising innovation.” Joining Geyer and García at the plant opening were representatives from Prodalim, Centec, and Weingut Bergdolt-Reif & Nett.

Backed by Global Ingredient Innovation

Solos’ global expansion is anchored by the scale and operating depth of its parent company, Prodalim. Solos Is Accelerating the Premium NoLo Category with Breakthrough Technology, Now Available to U.S. Vintners for the First Time

With a new, purpose-built North Coast plant, Solos makes its patented aroma recovery tech available to domestic brands, fueling the next wave of NoLo wine innovation.

Hopland, California, November 13, 2025 Solos, a subsidiary of global ingredient solutions provider Prodalim and the leading innovator creating true-to-source NoLo wines that deliver the aroma and taste today's consumers seek, announced the upcoming opening of its purpose-built no- and low-alcohol (NoLo) plant in Hopland, California. Opening its doors in February 2026, Solos’ state-of-the-art facility brings its patented Aroma Recovery System(ARS) to U.S. vintners following rollout across Europe. ARS closes a critical gap in flavor and sensory-led quality in the NoLo space, a breakthrough empowering brands to create premium NoLo wines that taste like wine should: complex, varietally expressive, and origin-specific.

Global demand for NoLo wine is projected to reach USD$3.7 billion by 2030, with premium wine priced at $15 and above estimated to make up $1.5 billion of the market.i With its sought-after technology now available to U.S. vintners, Solos is creating a flywheel for the development of high-quality NoLo wines while expanding market access for brands. Operational now, Solos’ on-site pilot plant in Hopland mirrors full-scale production with 1:1 fidelity, empowering producers to quickly test and refine their own wines, eliminating guesswork and accelerating the innovation cycle.

“Solos’ technology represents a fundamental leap forward for the NoLo category,” said Matt Hughes, general manager of Solos Technology USA, Inc. “Our ability to sustain aroma and vinosity down to 0.0% empowers our partners to close quality gaps and bring varietal character, structure and quality back into focus. We’re excited to catalyze the next generation of wine innovation.”

Aroma plays a pivotal role in how taste, structure, and mouthfeel are perceived. When a wine’s aromatic fingerprint is retained, consumers experience a more true-to-source product delivering emotional and sensory continuity from the original to its NoLo version. Developed and refined over 10 years of deep R&D and unique among NoLo solutions, ARS uses solid-phase extraction to capture a high volume of aroma molecules directly from a dealcoholized wine’s liquid distillate. Aromas are then reintroduced, carrying a wine’s original aroma signature to the finished product.

Located in the Feliz Creek Wine Business Park off of Highway 101, the 9,000-sq-ft Hopland facility includes 1,700 square feet of office and client space designed for hands-on collaboration. On-site tank storage and mobile bottling integration enable a seamless end-to-end solution for customers. Powering dealcoholization is a Centec DeAlcoTec vacuum distillation column, recognized for efficient, gentle alcohol removal at low temperatures. Dealcoholization with aroma recovery by ARS occurs at speeds of up to 800 gallons an hour, with current annual capacity of four million gallons.

Rack & Riddle, the #1 custom sparkling wine producer in the U.S.ii, is Solos’ exclusive partner for sparkling wine production. With a process centering on Solos’ ARS, Rack & Riddle will manage NoLo sparkling wine product development and finishing, inclusive of packaging in a variety of in-demand formats. Solos’ Hopland plant joins facilities now servicing markets in Germany, Switzerland, Austria, Spain and France, as Solos scales rapidly to meet global demand for premium NoLo production. While the U.S. plant focuses on wine, Solos also provides aroma recovery and essence solutions for beer and spirits, including branded and white-label applications, with further updates expected in 2026.

Centec GMBH and Solos - by Prodalim, to sign a Cooperation Agreement

Centec and  Solos by  Prodalim have agreed to cooperate on the construction of modules for aroma recovery from a vacuum rectification plant based on a regenerable resin bed according to the patented process of FlavoLogic a subsidiary of Prodalim. These modules are to be used in particular in dealcoholization plants of the "DeAlcoTec" type from Centec GmbH to further optimize the taste of the end product. The agreed cooperation includes collaboration in the planning, project execution, delivery, installation and commissioning for the dealcoholization of fermented products such as wine, cider, beer, and spirits.

The world is experiencing a dramatic growth in demand for high-quality alcohol-free products. The main challenge of the industry is the loss of aroma during the process. The combination of the great know-how and experience of Centec in building alcohol removal equipment, and the advanced patented aroma recovery technology of Solos, brings full premium quality solutions to the industry.

Since 1987, the Prodalim group, consisting of five global companies, has been distributing a wide range of products and solutions for the juice and beverage industry. From meticulously processed raw materials such as fruit extracts, juice concentrates, and purees to versatile services including sourcing, blending, and product development, Prodalim offers comprehensive support at every step of the manufacturing process for its customers.

Founded in 1976, the Centec group operates worldwide and specializes in high-precision measurement technology, fully automated process systems, and complex turnkey projects, particularly for applications in the brewing, wine, food, and pharmaceutical industries. Among other things, Centec has decades of specific expertise in the dealcoholization of fermented products using the "DeAlcoTec" vacuum rectification system developed in-house, as well as all processes in addition to dealcoholization, such as product conditioning and aroma dosing, carbonation, alcohol storage, flash pasteurization, CIP systems, and media supply as well as refrigeration systems.

With the contractually agreed cooperation, the project partners are jointly pursuing the goal of having Centec build the improved aroma recovery method patented by FlavoLogic and integrating it into new and existing "DeAlcoTec" plants as an optional module. Furthermore, Prodalim service centres equipped with "DeAlcoTec"/FlavoLogic technology are to be created worldwide as a result of this collaboration, which will enable dealcoholization on a contract basis for local customers.
